As promised from my last post, here is a recap of what we had with the delicious roast last night.
Mashed potatoes, cajun green beans, corn and a yeast roll.

(I don't eat corn but love to cook it for my man)
with ketchup for the roast.

because he ate them before I could take a picture,
well all of them but the fork full.
I have many ways to cook mashed potatoes and here is the recipe for these yummy, fluffy whites!
Red Mashed Potatoes:
4 or 5 medium red potatoes
1 tbsp of margarine
salt and pepper to taste
3/4 cup of sour cream
Wash the potatoes and cut off the bad places. Leave the skin on and cut into cubes. Boil until soft with margarine. Drain water and mix in mixing bowl with salt, pepper and sour cream. Pour into baking dish and bake for 15 - 20 minutes in a 350 degree oven. ENJOY!
So yummy! I love roast and good ol' country comfort food!
