It's been weeks since we actually had a Friday night with nothing to do. So tonight, I cooked... southern style.
That's right - Southern Comfort at its best.
Fried chicken, peas, loaded mashed potatoes & cornbread muffins.
Now that we have happy plates, my kitchen is clean and the dishes are washing in the dishwasher, I'm stuffed and ready for bed!
IF for some reason you'd rather not fry the chicken, try my
3 or 4 boneless chicken breasts, washed and trimmed
rub chicken with extra virgin olive oil
sprinkle with tonys on both sides
sprinkle with italian seasoning on both sides
(you don't want to pour the olive oil in the dish because that is just like frying it)
Place in a baking dish and bake at 375 for an hour (flipping the chicken half way through the cooking time)
It's divine the day you bake it and for left overs! (Which I'm not a left over fan!)
And if you don't like peas, try my

Cajun Green Beans recipe...
Fry up three slices of bacon in a skillet
Remove the bacon but leave the grease
Add two cans of no salt added green beans with half the water drained from the can.
Sprinkle tonys across the beans (a lot if you like spicy) and italian seasoning.
Sprinkle olive oil over the beans and then let the beans stir fry until all the water has evaporated.

That sounds so good and very easy! An alternative to what i do....dump canned green beans in a pan and then straight to the plate.
