Toffee Coffee Cake Muffins

Muffin Mix 
(Note:  you can put these ingredients in a jar and give as a gift... or keep in a jar and pull out when your ready to make these delicious muffins!!) 
2 cups flour
1 cup sugar
1/2 tsp salt
1/4 tsp baking soda
1 tbsp baking powder
2 tsp cinnamon
1 cup toffee bits
1/2 cup white baking chips
1/2 cup chopped pecans


To Bake
2 eggs
1/2 cup butter
1 cup sour cream
1 tsp vanilla
extra sugar


To bake muffins, preheat oven to 375 degrees.  Beat 2 eggs with a whisk in a large mixing bowl.  Mix in 1/2 cup cooled melted butter, 1 cup of sour cream and 1 tsp vanilla.  Stir in muffin mix until combined well.  (Batter will be thick.)  Fill 12 greased regular size muffin cups with batter and top with extra sugar.  Bake about 20 minutes until done.

I promise you - these will be the best muffins you've ever made and tasted!!

New Years Eve change of plans

Tonight had big plans for us but since mother nature has taken a turn for the worse, we are moving the activities to tomorrow night. We did manage to make it to Outback and enjoy a nice meal before driving home in the pouring down rain.  

I have checked in with my renters in Jackson and they say the house is fine but much of the area has damage.  Some of my friends in the Pearl and Flowood area are without power and have no idea what is to be seen when the power comes back on and when daylight hits tomorrow.  Please say a prayer for them tonight... 

We are saving our fireworks party for tomorrow night.  God will be supplying the light show tonight!!

Well, it's over...

The Christmas tree is down and all the ornaments, mesh and ribbon have been packed away.  All the ninety-six beautiful Christmas cards we received have been taken off the garland and placed in a pile on the bar and the furniture has been put back where it belongs.  And I'm sure I'll be getting use to everything getting back to normal, soon, right?

I love Christmas time and the things that it brings.  The sweet sounds of Christmas carols, all the Christmas movies with no one Santa looking the same, all the get togethers with friends and family and of course, the Christmas decor.  But there is something about the day after Christmas.  The day when you have to start thinking about taking all the decor down, seeing no more presents under the tree, wondering when the movies and music of the season will be no more til next year and dealing with the post Christmas blues.  

I seem to get them every year and this year I was hit hard with it.  I have been on vacation since December 8th and have had something to do EVERY SINGLE DAY since that day came.  And this past Monday, there was nothing on my calendar.  Did I enjoy sleeping late, you better believe it but I found myself wanting something to do.  I kept telling myself that next Monday you will give anything to not have anything to do but nevertheless, I had the blues.  

The blues quickly left me yesterday as I became ill with a nightmare of a migraine.  I hate being sick and this put me on my back and sick as a dog.  Thankfully after a semi good night's sleep I got up and made it to the appointment Terry had set up for me to have my new bluetooth for the car set up and professionally installed.  He went back to work and I took his truck for the day so I could spend time with my nieces in town.  We had a blast eating out, shopping and yes, they even made WalMart fun!  But then came time for their nap... which meant going home to un-decorate the house.  

About thirty minutes into it Terry called to tell me my car was ready.  We went to get it and I LOVE this bluetooth system for my car.  I can't wait to play with it more when I'm on the road.  But of course, the time came again, for me to head back home.  

And now, I sit here blogging with the house no longer decorated for Christmas.  The furniture back in it's place, the tree packed in it's bags out in the garage (thanks to Terry) and it's not the same as it was last night.  No twinkling of the lights, no Christmas music or Christmas movie on TV but one thing is for sure... if Christmas were all year long, it wouldn't be as special as it is!  So, til next year!!

Christmas 2010 was a great Christmas.  We are so blessed with wonderful family and friends who love us so much.  Enjoy the pictures from our Christmas celebrations in 2010.  Although, the camera never left the truck at our Christmas celebration at grannys or my parents on Christmas Eve.  But there are still lots of pictures to share!  =)

A little "before" Christmas pampering

The Wednesday before Christmas, my sister-in-law and I decided to take my grandmother to do something she had never had done before... get a mani and pedi!

It's always hard to figure out what to get her for Christmas and this year, with the addition of the other gifts we got her for Christmas, we took her to be pampered.  I think she loved it.

We picked her up a little after 9 a.m. and off to Meridian we went.  She told us stories of how she and granddaddy met (he died when I was one) and how things have changed since the "good ole days."  After we got to Meridian, I think she got a bit nervous.  You see, she has NEVER had a pedicure so the chair contraption kinda scared her.  But once we got her settled in I think she really started to enjoy it.

After the pedicures, we all got manicures and went to O'Charleys for soup and salad before taking her back home.  It was a great day to get her out of the house and let her enjoy a day of pampering.  And, I think Mary Martha and I had a great time seeing her so happy!!

Annual Christmas Party

Since 2007 (when I moved back to Meridian from Jackson), I have hosted a Christmas party at my house.  And this year was no different.  Back in November we decided on a date that would work with everyone and it turned out to be the Monday before Christmas.  

I've been off work since December 8th and have been able to bake, clean and get things ready for that day.  We decided on finger foods this year which worked perfectly!  Everyone brought a dish and we had everything from shrimp and crab dip, chicken nuggets, sausage balls, dips and SWEETS!  Boy oh boy did we have sweets!  I made homemade fudge, chocolate covered pretzels, my homemade chocolate chip and peanut butter chip cookies and SO much more!!  And our sweet friend Elizabeth made her wonderful chocolate chip pound cake.  (No worries, I'm getting the recipe soon and will be sharing with you.)

After everyone stuffed their faces, twice, we all sat around and enjoyed laughing and catching up as it was our last party of 2010 together.  Of course, during that time, we planned three parties in 2011!!!  Hey, what can I say, we LOVE to have fun!!  Before everyone left, each couple got a "GO DAWGS" ornament from Terry and me!  (I hate we never broke out the camera!  This is the first year of no incriminating photos!!)

We are so blessed with the wonderful friends we have in our life and enjoyed spending time with them a few days before Christmas!  Who knew we could fit all 16 of us in the living room at one time!!

Reindeer Cookie Recipe

I got the reindeer cookie recipe and thought I would share it with you.  
(NOTE: If you want to save time, just use ready to bake sugar cookies instead.  Then use the extra ingredients for decorating.)


 Ingredients/directions for cookies (Basic recipe for peanut butter cookies):
Preheat oven to 375 degrees
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup peanut butter

Beat until creamy.

Stir in:
1 egg
1 tsp vanilla
1 3/4 cups flour
1 teaspoon baking soda

Extra ingredients for decorating:
Chocolate covered pretzels (can use regular), chocolate chips, and red hots.

Cookie Exchange Christmas Party


We've all heard about and played "dirty santa" at Christmastime but, have you ever heard of a cookie exchange party?  The first weekend of December, my sister-in-law hosted a cookie exchange party for her Sunday School class moms and their kids.  The decor theme was Willy Wonka & the Chocolate Factory and each child was asked to bring a dozen cookies (there were twelve kids) to exchange with the other children.  I put boxes together for each child to hold the cookies they exchanged with.

After the kids exchanged cookies, they made Christmas cards for the shut ins that are members of the church.  

I think the kids had a great time and this is now an annual event.  Hope you enjoy the pictures.

Adult Truths

One of my best friends sent this to me last night and I thought I would share with everyone.  Hope you enjoy it as much as I did!

 
1. I think part of a best friend's job should be to immediately clear your computer history if you die.

2. Nothing sucks more than that moment during an argument when you realize you're wrong.

3. I totally take back all those times I didn't want to nap when I was younger.

4. There is great need for a sarcasm font.

5. How the hell are you supposed to fold a fitted sheet?

6. Was learning cursive really necessary?

7. Map Quest really needs to start their directions on # 5. I'm pretty sure I know how to get out of my neighborhood.

8. Obituaries would be a lot more interesting if they told you how the person died.

9. I can't remember the last time I wasn't at least kind of tired.

10. Bad decisions make good stories.

11. You never know when it will strike, but there comes a moment at work when you know that you just aren't going to do anything productive for the rest of the day.

12. Can we all just agree to ignore whatever comes after Blue Ray? I don't want to have to restart my collection...again.

13. I'm always slightly terrified when I exit out of Word and it asks me if I want to save any changes to my ten-page technical report that I swear I did not make any changes to.

14. I keep some people's phone numbers in my phone just so I know not to answer when they call.

15. I think the freezer deserves a light as well.

16. I disagree with Kay Jewelers. I would bet on any given Friday or Saturday night more kisses begin with Miller Lite than Kay.

17. I wish Google Maps had an "Avoid Ghetto" routing option.

18. I have a hard time deciphering the fine line between boredom and hunger.

19. How many times is it appropriate to say "What?" before you just nod and smile because you still didn't hear or understand a word they said?

20. I love the sense of camaraderie when an entire line of cars team up to prevent a jerk from cutting in at the front. Stay strong, brothers and sisters!

21. Shirts get dirty. Underwear gets dirty. Pants? Pants never get dirty, and you can wear them forever.

22. Sometimes I'll look down at my watch 3 consecutive times and still not know what time it is.

23. Even under ideal conditions people have trouble locating their car keys in a pocket, finding their cell phone, and Pinning the Tail on the Donkey - but I'd bet everyone can find and push the snooze button from 3 feet away, in about 1.7 seconds, eyes closed, first time, every time.

24. The first testicular guard, the "Cup," was used in Hockey in 1874 and the first helmet was used in 1974. That means it only took 100 years for men to realize that their brain is also important.

Today I was asked to help judge the Philadelphia Christmas parade that was held tonight.  I had the best time and enjoying the yummy hot chocolate but just about froze.  We loved the overall float by Neshoba Hospital! Thanks Philly for inviting me, Angie and Janie to come and judge your wonderful parade! 

Boy, do I have a lot to blog about.  Hope to get caught up tomorrow...

 I love my nieces to death, even Terry's, too.  But, we have always said we just want boys.  Well, a few days ago I went to see my nieces after work.  It seems like ages since I just went and spent some time with them at their house to play.  We normally meet up for lunch one a week and I talk to them on the phone all the time but it was time for some one on one time with them.  And that is exactly what I got.

When I got there, Ava was still napping so I asked Anniston what she wanted to do.  She wanted to play princess and drags me into the bathroom.  She said, "make me into a princess Auntie Joy."  So her wish was granted.  Put on a very tiny bit of makeup and curled her hair and put her "crown" on.  

Sorry the pictures aren't good quality... they were taken with my blackberry.  But, enjoy the pictures!!
