Not your average chicken

A few years ago, my godmother gave me one of her recipes for a chicken dish she makes that I like.  She said she hesitated to give it to me because she thought I would never try it due to the ingredients used to prepare the recipe.  (You know somethings you eat, your better off not knowing what was used to make it.)   And she was right, it has taken me five years to get up the nerve to buy the ingredients (which there aren't many just a weird, to me, combination) and try it out.  

Today was the day to try it out.  

Would you ever put these three things together?


 Of course not but I bet you will consider trying them together, now.

Apricot Glaze Chicken
8 ozs of Russian dressing
1 envelope (1 oz) of dry onion soup mix
12 ozs apricot preserves
chicken breasts

Place chicken in a greased large roasting pan.  Combine salad dressing, soup mix and preserves and spread over chicken.  Bake at 300 degrees for 2 hours or until done.

Apricot Glazed Chicken, Green Bean Bundles, Loaded Mashed Potatoes and Texas Toast

The meal hit the spot and we will be using this recipe for the Apricot Glazed Chicken again, soon.

And if your sick of chicken — buy meatballs in your local grocery store's freezer section and pour the sauce over them in a crock pot and cook on low for a few hours.  YUM!
