To say this week has been wonderful, well, that would be totally understated — it's been uh-ma-zing! A few of you know why, but the best part is this week isn't over yet. As a matter of fact, I think I could very well get use to every day being like this week.
After leaving work yesterday, I sad goodbye to the pile of work on my desk and hello to relaxation. I had planned to be off three days this week, but I couldn't stand to have the majority of it waiting on me when I return next week. So, I went in yesterday and got a good bit finished up to enjoy my few days off.
The blog will be on vacation, too. I promise to tell you all about it when we return, but until then — the computer will be turned off. The weather promises to be delightful and we plan to enjoy every minute of it. We have a lot planned over the next four days, but we are looking forward to enjoying it together.

Lucky Green Velvet Cupcakes
1 Box yellow cake mix
4 eggs
1/2 Cup water
1/2 Cup vegetable oil
1 small box instant vanilla pudding mix
1/2 Cup sour cream
5-8 drops Green food coloring
Frosting
8 oz softened cream cheese
1 stick softened butter
1 lb powdered sugar
Yellow food coloring
1. Preheat oven to 350 degrees. In a stand or electric mixer, add cake mix, eggs, water, oil, pudding, and yogurt. Beat on medium for 1 1/2 minutes. Slowly beat in 5-8 drops of green food coloring until you get desired color of green. Scoop batter into paper lined mini cupcake tins. Bake for 15-18 minutes or until cooked through. Let cool completely.
2. To prepare frosting, beat cream cheese and butter until creamy. Slowly add powdered sugar until creamy and thick. Then add in a few drops of yellow food coloring mixing well. Then decorate your cupcakes!
Makes 36 mini cupcakes
