Birmingham Eats... Chuy's

We've been told by a few people that we really oughta check out a tex-mex restaurant, Chuy's at The Summit. We had a rare opportunity to go out for lunch during the week and we chose Chuy's. I'm a huge fan of Mexican food, and it was delicious, but rather expensive.

Once we were seated, we ordered some queso to enjoy with our chips and salsa. Both the salsa and the queso had a pretty good kick to them, but ate almost all the queso so I guess it was our favorite.

For our entrée the hubs ordered the Chuy Special — which was an enchilada, but instead of "red sauce" it came with "green sauce." He ate it, but I'm pretty sure he won't order it again. I ordered the deluxe quesadilla with fajita chicken. I really liked my dish, but there was no way I could eat it all...

Now we can officially say we have eaten here. Not sure it will be our "go to" place for Mexican, but it was something new and different and we will come back.
