Birmingham Eats... Chuy's

We've been told by a few people that we really oughta check out a tex-mex restaurant, Chuy's at The Summit. We had a rare opportunity to go out for lunch during the week and we chose Chuy's. I'm a huge fan of Mexican food, and it was delicious, but rather expensive.


Once we were seated, we ordered some queso to enjoy with our chips and salsa. Both the salsa and the queso had a pretty good kick to them, but ate almost all the queso so I guess it was our favorite.


For our entrée the hubs ordered the Chuy Special — which was an enchilada, but instead of "red sauce" it came with "green sauce." He ate it, but I'm pretty sure he won't order it again. I ordered the deluxe quesadilla with fajita chicken. I really liked my dish, but there was no way I could eat it all...


Now we can officially say we have eaten here. Not sure it will be our "go to" place for Mexican, but it was something new and different and we will come back.

  1. Joy! I"m showing my mom your blog and she loves it!! Also, aren't you guys moving to Birmingham? I could have sworn i saw something about it and if so, my mom is dying to know if you're still going to do the 393! ha! i am just so elated for you and Terry--you look blissfully happy together and i hope i get to see the two new married love birds soon!     1. Jen, we are moving to Bham. Terry is already working there (has been since November) and now I'm looking for a job there. =)

  2. We have a Chuey's too!! I wonder if it is the same chain. Did they bring you a white, ranch-jalapeno dip with your chips and salsa? It my favorite. We got there every Friday for dinner :-)

    1. They didn't! =( It must not be the same chain... this is more Tex-Mex... which I'm sure y'all have tons of in Texas! =)

  3. There is a Chuy's behind my office building in Houston and we eat there almost once a week! Super yummy!
