Mini Tomato Tarts

We had yummy tarts at our home reception and a few people have asked for the recipe. The recipe came from the book below and you can order it by clicking here.


This very easy and very delicious appetizer from Easy Parties. It has only four ingredients mixed together and baked in prepared mini filo shells.  It yields 45 tarts and is as delicious at room temperature as it is warm from the oven.  

Mini Tomato Tarts
1 (10-ounce) can Ro-Tel tomatoes, drained
1 cup mayonnaise
1 (3-ounce) package real bacon bits
1 cup shredded Swiss cheese
3 (19-ounce) packages mini filo shells, thawed

Preheat oven to 350 degrees.  Combine tomatoes, mayonnaise, bacon bits, and cheese.  Fill shells and bake for 10-15 minutes.  Yield:  45 tarts.
