What I'm cooking... Pulled Pork

I'm always looking for new recipes to try, and pinterest seems like the best place to look these days. Since we aren't eating out every meal anymore (thank goodness), and I'm meal planning, I decided on this recipe last weekend. The only ingredient I needed to buy at the grocery store last Monday for this meal was the pork, and thankfully Publix has a wonderful meat market.

Here's what you'll need...

pork butt (the one we bought was 3.6 pounds)
1 can of Diet Pepsi (always on hand in the fridge)
1/2 bottle of Sweet Baby Ray's BBQ Sauce
Lawry's seasoning salt

Generously coat the pork butt with Lawry's seasoning salt. (I coated it well.) Place in the crock pot and pour in the soda and BBQ mixture. Cover and cook on low for 6 hours. If you have a larger piece of meat, or smaller, cook longer or shorter. After 5 1/2 hours or so, take two forks and shred the meat into bite size chunks. Let it sit in the juice to soak up all that flavor.


It can stay on warm in the crock pot while serving, and can easily be reheated the next day. We enjoyed the pulled pork on buns, and had loaded smashed red potatoes and baked beans for the sides.


It was the perfect meal for the Mr and I after a day of shopping, and house hunting.

  2. That looks delicious! I have always wanted to try pulled pork and I am all for crock pot recipes. I would really like to give this one a try.
    Pintrest is definitely my weakness...I have actually deleted the app a few times on my phone. It never lasts more than a day or so...then I upload it right back on! Ha!
