If you remember, I was introduced to the wonderful invention called Nutella when I went to visit Darby in Houston. Yeah, I'm always a year behind on the fads. Ha! Anyway, I bought some, and really just didn't know what to do with it besides take a spoon and eat it from the jar. So I started searching for some recipes, and found one for over ripped bananas and Nutella. Yes, I'm pretty sure I squealed out of pure joy! This past weekend, I decided to try out the recipe, after I begged the Mr not to eat the last two bananas we still had on the counter. =)
What you'll need:
1 1/2 cups of all-purpose flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt
2 over ripped bananas, mashed
3/4 cup of sugar
1 egg
1/3 cup of oil
Nutella
Preheat your oven to 375 degrees. Mix flour, baking soda, baking powder and salt together in a large bowl. In a smaller bowl, mix bananas, sugar, egg and oil together. Add the banana mixture to the larger bowl and lightly mix until all dry ingredients are incorporated. Spoon batter into muffin tins or cups. Then take dollop of Nutella and swirl into each muffin mixture. Bake for 15-17 minutes, or until an inserted toothpick comes out clean.
These are perfect to make ahead for your families breakfast for the week. And, they'll love them!
