This is one of my favorite desserts. And it's very simple to make.
Ingredients & Directions for the crust:
1 1/2 cup of self rising flour
1 1/2 sticks of margarine
1/2 cup of chopped pecans (optional)
Mix margarine, flour and pecans. Press into a 9 x 13 dish and bake in a 350 degree oven until slightly browned. (Usually about 12 to 15 minutes.) Cool.
Ingredients & Directions for the toppings:
1 (8oz.) cream cheese softened
1 cup of sugar
Large Cool Whip
Large box instant chocolate pudding
1/4 cup of chopped pecans (optional)
Using your mixer, cream the cheese, sugar and 1/2 of Cool Whip. Spread over the cooled crust. Prepare pudding by using the directions on the box and spread over the cream cheese mixture. Top with remaining Cool Whip. Sprinkle with 1/4 cup of chopped pecans over the top. Refrigerate for two hours and then it's ready to cut, serve and ENJOY!!
Note: I do not use pecans when I make this recipe. Terry doesn't like any kind of nuts. And to me, it's so smooth without them! To make this recipe "good" for you: use fat free or low fat products. I did and it tastes just the same without all the calories!
