Depending on how many people I'm cooking for depends on how many potatoes I use. So this recipe is what I cook for the Mr and I...
3 or 4 medium to large white potatoes
2 tablespoons of butter
1/2 to 3/4 cup of sour cream
1/4 sharp cheddar cheese
salt and pepper to taste
I peel and cut my potatoes and boil them until tender. Drain the water and then pour in a mixing bowl and add the butter, sour cream and cheese. With a hand mixer, I blend all the ingredients with the potatoes until little to no lumps. Then pour your potato mixture in a baking dish already sprayed with Pam, and bake for 15-20 minutes on 350 degrees.
See, I told y'all it was easy. Let me know if you make them. I've heard people substitute greek yogurt for the sour cream. I haven't tried that yet, but I might one day. Y'all enjoy!

Oh yum, that sounds so wonderful! I do love some potatoes, in any form really!
ReplyDeleteI add a little less sour cream and 3-4oz cream cheese + some chives :) DELICIOUS!
ReplyDeleteIf I'm out of sour cream, I add a bit of cream cheese. Fabulous.
ReplyDeleteHow fun! My recipe is almost exactly the same. I add bacon bits to mine for the hubs!

ReplyDeleteHoney, please stop eating all of those carbs - your baby is depending on you to eat healthy food - grass-fed meat, wild Alaskan salmon, organic green vegetables, fruits, nuts and good oils like coconut oil.
ReplyDeleteFaun, I would have emailed you personally, but you are a no comment blogger. I appreciate your concerns, however, I am getting those healthy foods that my Dr and I have talked about.
DeleteLooks delicious! I'm so glad that you posted this!
