What I'm Cooking... White Chicken Enchiladas

Mom makes these when she comes over to visit, mainly because she made them one time for the Mr and he keeps requesting them. She left me the recipe, but I let her make them. So maybe the title of this post should be...What Ganny's Cooking...


White Chicken Enchiladas...

10 soft taco shells
2 cups cooked shredded chicken
2 cups shredded mexican blend cheese
3 Tbsp butter
3 Tbsp self rising flour
2 cups chicken broth
1 cup sour cream
1 4oz. can diced green chillies

Preheat oven to 350°. Grease 9x13 dish. Mix chicken and cheese and place inside tortillas and roll them up. Melt butter, stir in flour and cook for one minute. Add broth and wisk until smooth cooking over medium heat until bubbly. Stir in sour cream and chillies. Do not bring to a boil! Pour over tortillas and top with one cup of cheese. Bake for 22 minutes and then under high broil to brown the cheese.
